Reading the layers of previous repair

A car with one careful owner is straightforward to assess. A car with five is an archaeology problem. Somebody replaced a wheel bearing correctly; somebody else fitted the cheapest available brake pads; a third dealt with a coolant leak by topping it up every fortnight and selling it in spring.

None of that appears on a history report and none of it is disclosed, because most of it is not knowingly hidden — the current owner inherited it too. What an inspection does is read the layers, and tell you which decisions you would be inheriting next.

Does a long list of previous owners matter?

Less than what each of them did. A five-owner car that was maintained properly throughout is a better buy than a two-owner car that was neglected by both.
